I purchased this pan as part of a custom set I made. The first thing I made was a homemade pot of Jambalaya. I was immediately impressed with the Stainless Steel surface. I have pans from other well-known companies, and everything always sticks to them after cooking. Even after proper pre-heating, oil, and heat management, things stick after a while. This dish requires me to sautee vegetables for about 45 minutes. This pan did this with minimal sticking, and the vegetables sauteed evenly. My wife loves nonstick pans, and she almost refuses to cook on any of my stainless steel pans because she gets so frustrated with the food sticking. She came into the kitchen for a while, stirred the vegetables up, and even commented on how little sticking was occurring. She now wants to buy a frying pan! I have an electric cooktop, and once the pan got up to heat, I turned the fire down to 3. I have never cooked at this low of a heat setting. This is my first copper pan experience, and what I have read about its heat conductivity is very accurate! I filled the pan with all the other ingredients and put it into a 300-degree oven with the lid on for an hour. When I removed the pan from the oven and removed the lid, my Jambalaya was beautiful, and still NO STICKING! I have only seen this kind of performance with Cast Iron. The weight of this pan is similar to that of cast iron, but it is super responsive to changes in heat. I was initially concerned about the 24cm size being too small, but this is a great size to cook with for a small family. You could easily cook three to four servings within this pan. These are expensive cookware items, but the quality is unbelievable! I promise if you give them a try, you will love them!
